
Happy Memorial Day. Its not officially summer yet, but the first long weekend means no work today, BBQs, sunshine…and fun refreshing cocktails. I have a major thing for a little spice, so this drink is right up my alley.

A spicy twist on the classic Moscow Mule. This variation features tequila, serano chili, cilantro, fresh lemon juice and ginger beer. It is simple, yet complex. Spicy and refreshing.

Cilantro Chili Mule, Serves 1
- 2oz. tequila (i used reposed)
- 1- 2 slices of serano chili (i used 2 but start with one, especially if you are sensitive to heat)
- 5 cilantro leaves
- juice of half a lemon
- ginger beer to top off
- sprig of mint for garnish
In a medium sized glass lightly muddle chili, cilantro and lemon juice. Fill glass with ice. Add tequila. Top with ginger beer and stir. Garnish with sprig of mint (give the mint a light smack to release its full flavor) and a slice of lemon. If flavor of chili is too intense, add a little more ginger beer.
